Sustainable Practices: Catering services within Dining and Summer Conferences (DSC) are committed to the use and purchase of environmentally and socially responsible materials and products. Recognizing our impact as a major purchaser of goods and services, purchases that are made on behalf of the university give preference to environmentally friendly products. (e.g. Eco-Products vs. Styrofoam).
When DSC became student run in 2009, its focus was to identify products that were not sustainable. For instance, DSC changed from traditional plastic, disposable table ware, and cups used in catering to those that can be composted. Now, all the plastic cups are made from plant based materials that rapidly biodegrades. They also replaced all bottled water sold in their operations with water contained in sustainable packaging.
When possible, catering uses Eco-Products and serves food that is purchased from local vendors (MN, IA, WI). During the summer months is the best time of the year for sourcing local because of the various events and variety of food options available.
In the past, students (often natural resource majors) who have worked for catering have used their knowledge on sustainability to better the service. They have implemented a system to recycle coffee grounds from catering events and properly dispose of recyclables in proper containers when possible.
When deliveries are made to the facility, the products often come shipped on big pallets and are wrapped in plastic wrap. Recently, student managers created a separate bin that plastic wrap is placed in to be recycled properly instead of it going directly in the landfill which takes years to be broken down.
